Huevos rancheros recipe details
- Ingredients:
- Tortillas (corn)
- eggs (large)
- cheese (cheddar grated)
- green onions, cilantro garnish if desired
- Salsa:
- 1 large can stewed tomatoes
- 1 bell pepper, slivered
- 1 brown onion, slivered
- 2 teaspoons garlic powder
- salt
- 1/2 cup Pacepicante sauce (mild)
Microwave pepper and onion until soft. Add tomatoes, garlic, picante sauce, salt.
Break eggs into skillet that has been sprayed with Pam. When whites congeal, add 3 Tablespoons hot water, sprinkle cheese over eggs, cover and steam to desired doneness. Serve on 2 warm corn tortillas with warm salsa around the sides. Garnish with chopped green onion and cilantro.
