Hot kidney bean soup recipe details
Ingredients
150 g | dried kidney beans |
1 | red bell pepper |
1 | onion |
1 clove(s) | garlic |
1 small | green chili pepper |
300 ml | tomatoes, puréed |
1 l | vegetable stock |
salt and pepper | |
1 tsp | sugar |
cayenne pepper | |
4 tsp | crème fraîche |
2 tbsp | basil, chopped |
Instructions
Soak the beans overnight. The other day, cook the beans in the soaking water for 30 minutes, then strain through a sieve and discard the cooking water.Cut the bell peppers into stripes and the onion into rings. Finely chop the chili pepper. Place all the vegetables together with the beans into a saucepan and cover with the vegetable stock. Bring to the boil, stirring. Reduce the heat, then simmer over low heat for 20 minutes or until the beans are soft.
Strain the soup through a sieve. Take out of the sieve 4 tablespoons of the beans and vegetables and set aside. Return the remaining into the soup and purée the soup with a hand blender. Reheat and season to taste with salt, pepper, sugar and cayenne pepper.
Spoon into each soup plate 1 tablespoon of the reserved vegetable mixture. Ladle the soup over the vegetables and garnish with a dollop of Crème fraîche. Serve sprinkled with basil.
