Bean soup with bacon recipe details
Ingredients
| 500 g | green beans, trimmed and cut in small pieces |
| 3 sprig(s) | savory, leaves stripped off |
| 5 large | potatoes, peeled and cut in small chunks |
| 150 g | bacon, cut in cubes |
| 1 | onion, chopped |
| 1 ½ l | vegetable stock |
| 3 tbsp | oat flakes |
| 1 tbsp | oil |
| salt and pepper, to taste |
Instructions
Heat oil in a large saucepan and sauté bacon and onions until lucent. Add the oat flakes and cook stirring for a minute. Add beans, potatoes, savory leaves and 1-1½l vegetable stock. Season with salt and pepper and bring to a boil. Lower the heat and let simmer for about 20 minutes. Check seasoning and correct if necessary.Serve in warmed soup bowls.
