Hot chocolate brownie souffl s with rum sauce recipe details
Ingredients
90 g | butter, unsalted |
2 tbsp | flour, plain |
125 g | chocolate, dark, melted |
260 g | sugar |
1 tbsp | instant coffee powder |
1 tbsp | rum |
1 tsp | vanilla |
4 | eggs, separated |
250 g | vanilla icecream |
2 tbsp | rum |
Instructions
Grease 6 individual soufflé dishes (1/2 cup capacity), sprinkle lightly with sugar.Melt butter in pan, stir in flour and cook over heat 1 minute, stirring constantly. Add chocolate, sugar and blended coffee, rum and vanilla. Stir constantly over heat until smooth, do not boil.
Remove from heat, quickly stir in egg yolks. Transfer mixture to a large bowl. Beat egg whites until soft peaks form, fold lightly into chocolate mixture.
Pour into dishes, place dishes on oven tray, bake in moderate oven for about 15 minutes. Sift icing sugar over soufflés and serve immediately with cold sauce.
For the rum sauce: Soften ice cream at room temperature for about 10 minutes, stir in rum and beat until smooth.
