Family favorite. I make this on Thanksgiving for the family and they all rave about it. I am told it is one of the best and lightest pumpkin pies ever. Funny thing is, I don’t eat it. Add whipped cream and enjoy!

Ingredients
Serves: 8- 1 (29 ounce) can pumpkin (Libby’s (R))
- 1/2 tsp salt
- 2 eggs
- 2/3 cup brown sugar
- 2 TBS white sugar
- 1 1/4 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp cloves
- 1/2 tsp nutmeg
- 2 cups milk
- 2 9-inch frozen pie shells
Preparation method
Prep: 10 mins | Cook: 50 mins1. Preheat oven to 400 degrees F (200 degrees C).
2. Mix the pumpkin, salt, eggs, brown sugar, white sugar, cinnamon, ginger, cloves, and nutmeg with a hand mixer in a big bowl.
3. Add milk; stir by hand.
4. Pour 1/2 into one 9-inch pie shell, and 1/2 into the other.
5. Bake at 400 for 50 minutes, or until a knife inserted near the center comes out clean. Let cool.
