Ingredients
1 stalks | leek, sliced |
2 | carrots, sliced |
2 tbsp | parsley, chopped |
2 | onions, chopped |
salt and freshly ground black pepper | |
3 tbsp | butter |
1 tbsp | flour |
1 ½ l | beef stock |
400 g | beef steak, finely diced |
Instructions
In a saucepan, melt the butter and sauté the onions, leek and the carrots for 5 minutes. Add the meat and cook stirring until almost browned. Dust with the flour and cook another for 1-2 minutes.Pour in the stock and bring to a boil. Reduce the heat, cover and cook over low heat for 1.5-2 hours.
Purée the soup. Season to taste with salt and pepper. Serve the soup sprinkled with fresh parsley.
