Hospitality muffins recipe details
- Ingredients:
- 2-1/2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1-1/3 cup sugar
- 1/4 cup oil
- 1/2 cup sour cream
- 3 eggs, beaten
- 2 cups grated carrots
- One 8-ounce can crushed pineapple
- Topping:
- 2 Tablespoons cinnamon
- 1/8 teaspoon nutmeg
- 1/8 teaspoon all spice
- 1/8 teaspoon cloves
Preheat oven to 425 degrees. Sift flour, baking soda and baking powder. In separate bowl combine sugar, oil, sour cream and eggs. Add carrots and pineapple quickly. Add pineapple mixture to flour mixture. Fold with spatula until moistened. Spoon in 12 greased muffin tins. Mix topping ingredients together and sprinkle on top.
Bake at 425 degrees for 15 to 20 minutes. Cool in pan 8 to 10 minutes.
