Ingredients

500 | granulated sugar |
Instructions
Wash and scrub the fruit. Slice off the top and bottom of each fruit. Cut the peel in wide strips, from top to bottom, making sure that the pith remains attached to the skin.Place each variety of peel in a separate pan, fill with cold water and boil until soft. This may take up to 90 minutes.
When peel is soft, drain and place all together in one saucepan. Cover with cold water and bring up to the boil. Cook for a further 20 minutes before draining.
Dissolve the granulated sugar in 300 ml water in a large saucepan over low heat. Bring up to the boil and gently stir in the peel. Reduce the heat and simmer gently, stirring occasionally, until the peel has absorbed virtually all the syrup. This process may take up to 3 hours.
Line a grill rack with greaseproof paper. Arrange the peel in a single layer on the rack to enable it to dry. Allow 3 to 4 days for drying. During this period turn over twice.
Once dry, store in an airtight jar or container.
