This recipe is a variant of Pam Anderson’s Wonderful Meatloaf that I made into a healthy meal by substituting ground turkey and adding broccoli plus other ingredients for a good healthy meal for those watching their waistlines or their health.

Ingredients
Serves: 4- 1/2 cup fresh mushrooms
- 1 1/2 pounds ground turkey
- 1 cup cooked rice
- 2 tablespoons brown sugar
- 1 cup chopped onion
- 1 tablespoon ketchup
- 1/2 cup ketchup
- 1 (10 ounce) package frozen chopped broccoli
- 1 (8 ounce) package Smart Balance(R) cheese shards
- 1/2 tablespoon ground cumin
Preparation method
Prep: 15 mins | Cook: 1 hour1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine mushrooms, turkey, rice, brown sugar, onion, the 1 tablespoon ketchup, broccoli, cheese shards, and cumin. Mix well and place in a 9×13-inch casserole dish.
3. Bake in the preheated oven for 45 minutes. Spread remaining ketchup over the top of the loaf and bake an additional 15 minutes. Let cool for 5 minutes and serve.
