Ingredients
Serves: 6- 1/2 cup vinaigrette dressing
- 1/4 cup grated Parmesan cheese
- 2 teaspoons Dijon mustard
- 1/2 cup hickory wood chips, soaked in water for 1 hour
- 6 tomatoes, cut in half
- Salt and pepper
- 8 ounces fresh mozzarella
- 15 fresh basil leaves, finely chopped
Preparation method
Prep: 15 mins | Cook: 10 mins1. Whisk vinaigrette with Parmesan and mustard in a bowl. Set aside.
2. Drain wood chips and place in a smoke box. Set in the grill and preheat to medium.
3. Season tomatoes with salt and pepper. Set on the grill, face-up. Close lid and cook for about 10 minutes until tomatoes begin to peel. Cool.
4. Finish peeling the tomatoes, chop, and place in a bowl. Rip up the mozzarella and add to the bowl, along with basil. Stir with vinaigrette mixture to coat. Serve.
