Herbed dumplings recipe details
Ingredients
300 g | flour, self-raising |
60 g | digestive bran |
60 g | butter |
15 ml | fresh herbs of your choice, finely chopped |
10 ml | lemon rind, finely grated |
salt | |
black pepper, freshly ground | |
2 | eggs |
Instructions
Place the flour, bran, butter, herbs and lemon rind in a large bowl. Mix well with a fork or wooden spoon. Season with salt and pepper, and blend in the beaten eggs.Use lightly floured hands to shape the mixture into balls. Poach the dumplings in a large saucepan of boiling salted water. (They will rise to the surface when they are cooked through, after about 15 minutes.)
Serve with any casserole.
