Hearty vegetable and macaroni soup recipe details
Nothing fancy here, just a simple, great comfort food for a long Canadian winter. I used to come inside to this piping hot soup after a day on the outdoor rink.

Ingredients
Serves: 8- 1 large white onion, finely diced
- 2 tablespoons olive oil
- 6 cups chicken broth
- 1 cup water
- 6 cups tomato juice
- 2 cups canned diced tomatoes
- 1 cup cauliflower florets
- 2 medium white potatoes, cut into cubes
- 1 cup diced celery
- 1 tablespoon sugar
- 1 tablespoon freshly ground pepper
- 1 tablespoon salt
- 2 bay leaves
- 2 tablespoons herbes de Provence (rosemary, thyme, savory, basil, marjoram)
- 1 cup macaroni
Preparation method
Prep: 20 mins | Cook: 1 hour 20 mins1. In a large soup pot, saute the onion in the olive oil over medium-low heat until translucent.
2. Add chicken broth, water, tomato juice and diced tomato, and bring to a boil. Add all vegetables, sugar and spice. Reduce heat and simmer for an hour with lid on, stirring occasionaly, letting condensed water roll back into the soup from the bottom of the lid.
3. Increase heat back to a boil, add macaroni, gently boil for 6 minutes. Remove from heat, let sit for 5 minutes, and serve with bread or crackers.
