An easy pasta fagioli recipe that will impress your family and friends.

Ingredients
Serves: 10- 1 white onion, diced
- 3 tablespoons olive oil
- 2 cloves of garlic, finely chopped
- 3 (14 ounce) cans chicken stock (low sodium)
- 1 (14 ounce) can tomato sauce
- 1 (14 ounce) can petite cut diced tomatoes
- 1 (15 ounce) can red kidney beans
- 1 (15 ounce) can white kidney beans (cannellini beans)
- 1 (10 ounce) package chopped frozen spinach, thawed and drained.
- 1/2 teaspoon crushed red pepper flakes (or to taste)
- 1 teaspoon paprika
- 1 pinch dried thyme
- 1 1/2 teaspoons dried basil
- 1 1/2 teaspoons dried oregano
- 2 teaspoons dried parsley
- salt and pepper to taste
- 1/2 pound small shell, elbow, or ditalini pasta
Preparation method
Prep: 20 mins | Cook: 1 hour 5 mins1. In a large pot, saute the diced onion in olive oil until translucent. Add in the garlic and saute another 30 to 45 seconds.
2. Add in the chicken stock, tomato sauce, diced tomatoes, beans, spinach, and the herbs and spices. Stir to combine, bring to boil and then simmer (covered) for 1 hour.
3. Bring a large pot of salted water to a boil and cook the pasta according to package directions. Drain well and then mix into the soup base.
