Hearty moroccan beef stew recipe details
A stew unlike any you’ve had. The North African flavors of nutmeg, turmeric and cinnamon have a sweet/savory taste. But you aren’t skimping on hearty stew flavor, not with sweet potatoes and garbanzo beans in the mix.

Ingredients
Serves: 6- 1 tablespoon vegetable oil
- 1 pound beef round steak, cut into 1-inch cubes
- 1 onion, finely chopped
- 4 cloves garlic, minced
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped dried apricots
- 1/4 cup golden raisins
- 2 sweet potatoes, peeled and cut into 3/4-inch cubes
- 3 cups chicken broth
- 1 (15 ounce) can garbanzo beans, drained and rinsed
Preparation method
Prep: 15 mins | Cook: 1 hour 30 mins1. Pour oil into a large Dutch oven and set over medium-high heat. Brown beef cubes in hot oil, then set on a plate.
2. Cook onion in the Dutch oven for about 5 minutes to soften, then stir in garlic, ginger, cinnamon, nutmeg, turmeric, salt, and pepper. Cook for 90 seconds, then stir in everything remaining except the garbanzo beans.
3. Cook the stew for about 90 minutes. Add the garbanzo beans and cook for 2 to 3 more minutes, then serve.
