Ingredients
12 | chicken breast escalopes |
500 ml | single cream |
salt and pepper | |
500 g | crème fraîche |
1 tbsp | cornstarch |
3 pack(s) | sauce Hollandaise or Béchamel |
soy sauce | |
600 g | ham, diced |
12 slice(s) | canned pineapple, drained |
24 slice(s) | cheese |
24 small | Maraschino cherries |
1 tbsp | butter |
Instructions
Preheat the oven to 200°C.Season the escalopes with salt and pepper on both sides. Arrange them in a large buttered casserole or the dripping pan side by side.
In a saucepan, mix together the single cream, crème fraîche and cornstarch and bring to a boil, stirring constantly. Take from heat, stir in the Hollandaise or Béchamel and season to taste with soy sauce and pepper. Allow to cool for a while, then pour the sauce over the escalopes and sprinkle with ham.
Bake for 20 minutes. Take the pan out of the oven and arrange the pineapple and cheese on top of the escalopes. Garnish with the cherries and bake for 5 more minutes, until the cheese has melted.
Serve with potatoes or rice.
