Ingredients
700 g | potatoes, peeled and coarsely grated |
1 small | onion, finely chopped or coarsely grated |
½ tsp | salt |
½ tsp | freshly ground black pepper |
90 g | unsalted butter |
Instructions
Place the grated potato into the centre of a clean tea towel. Bring the corners together and firmly grip in one hand. Twist the bottom of the towel so to squeeze excess moisture from the potato. This will help the pancake to hold together. Empty the potato into a bowl and tease gently apart. Mix in the onion and season with the salt and pepper.Place a third of the butter into a large frying pan, ideally 11-12 inches diameter, 27-30cm over a medium heat until the butter melts and is bubbling. Add the potato mixture and press down with the back of a spoon into a firm cake. Cook for 6 minutes, without disturbing, and then remove from the heat. Cover with a large plate and hold the two tightly together. Flip them over so that the potato pancake is now sitting on the plate.
Return the pan to the heat and add half the remaining butter. Once melted, slide the pancake back into the pan, cooked side up and continue to cook for another 4-5 minutes, undisturbed.
Using a wooden spoon, break up the pancake into chunks slightly larger than bite size and add the remaining butter. Cook for another about 5 minutes or until crispy on the outside while still soft in the centre.
Divide between servings. Serve hot with steak, bacon, ham, sausages, corned beef etc and salsa, chilli beans or a salad.
