Ingredients
1 tbsp | coriander seeds |
1 tbsp | cumin seeds |
3 tbsp | harissa paste |
1 | lemon, juice |
olive oil | |
3 clove(s) | garlic |
1.6 kg | leg of lamb, boned and butterflied |
salt and pepper |
Instructions
In a mortar pestle the coriander with the cumin seeds. Add the garlic and pound to a paste. Add Harissa, lemon juice and 2 tablespoons of oil. Mix until well combined. Thoroughly rub the lamb with the paste and allow to marinate for 3 hours.Season the lamb with salt and pepper and grill for 25-30 minutes over low- medium heat, turning the meat occasionally.
Remove from the grill and allow to rest for 5 minutes before carving.
