Harira soup recipe details
Ingredients
500 g | lamb, on the bone |
1 | onion, chopped |
100 g | lentils, soaked overnight and drained |
100 g | chickpeas, soaked overnight and drained |
1 tsp | turmeric |
½ tsp | cinnamon powder |
¼ tsp | ground ginger |
1 pinch(es) | saffron |
1 ½ liter(s) | water |
lemon juice | |
salt and freshly ground black pepper | |
4 tbsp | butter |
4 tbsp | parsley, chopped |
2 tbsp | coriander leaves, chopped |
4 | beef tomatoes, peeled, seeded and chopped |
12 | lemon wedges |
Instructions
In a large saucepan, combine the meat with onion, lentils, chickpeas and season with turmeric, cinnamon, saffron and ginger. Cover with at least 1,5 litres of water and bring to a boil. Skim off any scum. Add half of the butter, cover with a lid and cook over low heat for 1 ½ to 2 hours until all is soft. Take out the meat, remove from the bone and cut into bite-sized pieces. Return into the soup. Season to taste with salt, pepper and lemon juice.In a small saucepan heat the remaining butter, add coriander leaves, parsley and tomatoes and cook over low heat for about 15 minutes, stirring occasionally. Add to the soup. Check seasoning and correct if necessary.
Ladle the soup into warmed soup bowls and serve with lemon wedges.
