Hard boiled eggs in a rocket and mustard sauce recipe details
Ingredients
800 g | potatoes, peeled and quartered |
2 bunch(es) | rocket, chopped |
4 tbsp | butter |
2 tbsp | flour |
150 ml | vegetable stock |
650 ml | milk |
3 tbsp | mustard |
salt and freshly ground black pepper | |
2 tsp | lemon juice |
nutmeg | |
8 | hard boiled eggs, peeled and halved |

Instructions
Cook the potatoes in salted water for 20 minutes or until done.In a saucepan, melt half of the butter. Stir in the flour and cook stirring until pale yellow. Pour in the stock and 450 ml of the milk and bring to a boil, stirring constantly with a wire whisk. Reduce the heat and simmer for approximately 10 minutes, stirring occasionally. Stir in the mustard and season to taste with salt, pepper, sugar and lemon juice. Stir in the egg halves and the rocket.
Drain the cooked potatoes and mash with the remaining milk and the remaining butter. Season to taste with salt, pepper and nutmeg.
Serve the eggs in mustard sauce with the mashed potatoes.
