Ham wrapped pork escalope with vegetable salad recipe details
Ingredients
50 g | peas, frozen |
¼ | cucumber, sliced |
salt and pepper | |
½ | red bell pepper, diced |
1 | shallot, diced |
1 tbsp | white wine vinegar |
sugar | |
3 tbsp | oil |
1 | pork escalope, thinly cut |
1 slice(s) | cured ham |
10 | fresh sage leaves |
Instructions
Blanch the peas in salted water. In a bowl, combine the shallot with a pinch of salt and the vinegar and leave to stand for 5 minutes. Add all the vegetables and 2 tablespoons of oil, toss and season to taste with salt, pepper and sugar.Season the meat with pepper. Place 3 of the sage leaves on top of the meat, fold over and wrap the escalope with the ham.
In a pan heat the remaining oil. Fry the wrapped escalope until golden and crispy on one side. Turn over the escalope and add the remaining sage leaves and fry until the meat is cooked and the sage leaves are crispy.
Serve the escalope sprinkled with the sage, together with the vegetable salad and fresh French bread.
