Ingredients
12 medium | ripe guavas |
450 ml | evaporated milk |
225 ml | condensed milk |
750 ml | water |
3 tbsp | cornflour |
2 tsp | freshly squeezed lime juice |
caster sugar, to taste |
Instructions
Peel and deseed the guavas and cut into cubes. Boil the water in a saucepan, add the fruit and the lime juice, replace the lid and simmer for about 45 minutes.Strain the juice into a large bowl and thicken with the cornflour mixed with a tablespoon or so of cold water. Add the milks and stir thoroughly to mix. Check for sweetness and add sugar about a tablespoon at a time, stir it in and recheck until the correct level is reached.
Pour mixture into an ice cream maker and freeze according to instructions. Remove from bowl when finished and transfer to a covered freezer-proof container and freeze for at least an hour until firm. If very firm. allow to soften in refrigerator for about 30 minutes before serving.
About this recipe:
If you are lucky enough to have access to tree-ripened fruit, the flavour is said to be superb. When able to obtain them, the fresh guavas I have been able to buy locally have been very expensive and not very flavour-full.
