Guaccagonzolasabi recipe
Ingredients
2 large | avocados, nice and ripe |
2 | Gorgonzola cheese or Cambazola or Stilton, ripe and runny |
1 stick(s) | celery, very finely sliced |
1 handful | walnuts, crushed or finely chopped |
1 small | apple, green, chopped finely and squirt with lime juice |
2 dollop(s) | cream cheese |
2 dollop(s) | wasabi paste, to your own strength |
1 handful | green grapes, seedless |
1 handful | prawns, peeled and slightly chopped |
2 dollop(s) | sweet chili sauce |
3 | potatoes, boiled in their skins, cold, peeled and coarsley grated |
3 dash(es) | lime juice |
Instructions
Peel the avocados, remove the stones, spoon the flesh in a mixing bowl and squirt with lime juice. Add the Gorgonzola and mash till a paste consistency is reached. Add all the other ingredients, apart from the prawns, potato and chili sauce, and fold together.
Fry the prawns in butter and season with the chili sauce. Using the grated potatoes, fry off into two patties.
When the potatoes are crispy on both sides serve these Rosti topped with a donut of avocado mix and in the well place the sweet chili prawns.
