Poached fillet of veal with lime sauce recipe details
Ingredients
1 | fillet of veal, approx. 600-700g |
salt and black pepper | |
1 tbsp | clarified butter |
For the broth: | |
1 piece(s) | celeriac |
2 | carrots |
1 l | chicken broth |
1 | lime, juice only |
5 sprig(s) | parsley |
For the sauce: | |
150 g | crème fraîche |
2 tbsp | butter |
1 tsp | flour, heaped |
salt and pepper | |
fresh lime juice | |
14 leaves | basil |
Instructions
Season the fillet of veal with salt and pepper and sear from all sides in hot clarified butter for 3 minutes. Take out of the skillet and set aside.Cut the celeriac and the carrots into small pieces. Bring the chicken broth to a boil, add half of the lime juice, the parsley, celeriac and carrots and cook over low heat for 15 minutes. Strain through a sieve and set aside 200 ml of the broth.
Bring the remaining broth to the boil again, place the fillet into the broth and simmer over medium heat for 15 minutes, don’t allow to boil.
In the meantime, reduce the 200 ml broth to the half. Stir in the Crème fraîche and cook for a minute. Knead the butter together with the flour and stir this in flakes into the sauce. Season to taste with salt, pepper and lime juice.
Take the veal out of the broth, drain and cut into neat slices. Whisk the sauce until slightly foamy and fold in the chopped basil.
Serve the fillet on warm plates with the sauce and boiled potatoes.
