Ingredients
2 medium | zucchini |
4 large | tomatoes |
2 large | green peppers |
120 ml | balsamic vinegar |
2 tbsp | orange juice |
1 tbsp | honey |
8 leaves | basil, chopped |
1 dash(es) | oregano, dried |
olive oil |
Instructions
Cut zucchini into 2 cm slices. Cut tomatoes into small slices.Brush both sides of both vegetables with olive oil and grill for 2-3 minutes on each side. Place in a bowl.
Grill peppers about 15 minutes until skins are charred. Place in a sealed plastic bag or foil for 5-10 minutes to cool and then peel off the skins. Add the peppers to the bowl, cover, and refrigerate for 12 hours.
In a small bowl combine vinegar, orange juice, and honey and stir in the basil and oregano. Drizzle over the chilled veggies.
Serve as a cold side dish by itself, or use the mix together with your favourite pasta.
