Grilled Vegetables with Watercress and Crispy Bacon recipe
Ingredients
170 g | watercress |
200 g | bacon, diced |
3 | bell peppers, red, green and yellow, chopped |
1 | courgette, chopped |
1 | aubergine, diced |
1 | red onion, quartered |
1 tbsp | olive oil |
50 g | pine nuts |
2 tbsp | balsamic vinegar |
salt and pepper, to taste |
Instructions
In a pan, fry the bacon in olive oil for 5 minutes until crispy. Set aside and allow to chill.
Pour oil in a roasting pan, add peppers, courgette, aubergine and onion and grill for 15 minutes until vegetables are soft. Stir in the pine nuts and grill for 4 more minutes. Remove from grill and season with balsamic vinegar, salt and pepper to taste.
Mix with watercress and bacon, serve warm and enjoy!
