Grilled vegetables soup recipe details
Ingredients
3 | summer squash, halved lengthwise |
1 medium | zucchini, halved lengthwise |
1 medium | leek, halved lengthwise |
1 large | eggplant, halved lengthwise |
1 large | red bell pepper, seeded, halved |
1 large | yellow bell pepper, seeded, halved |
2 medium | fennel bulbs, sliced |
1 l | double cream |
600 ml | vegetable broth |
180 ml | olive oil |
3 tbsp | fresh basil, chopped |
2 tbsp | fennel seeds, ground |
1 tbsp | fresh thyme |
salt and pepper, to taste |
Instructions
Drizzle olive oil over all vegetables and grill until tender.Place grilled vegetables in a blender and gradually add the heated chicken stock.
Combine mixture in a large pot with herbs and cream and cook, covered, over low heat, for 50 minutes.
Season with salt and pepper to taste.
