Ingredients

3  summer squash, halved lengthwise
1 medium zucchini, halved lengthwise
1 medium leek, halved lengthwise
1 large eggplant, halved lengthwise
1 large red bell pepper, seeded, halved
1 large yellow bell pepper, seeded, halved
2 medium fennel bulbs, sliced
1 l double cream
600 ml vegetable broth
180 ml olive oil
3 tbsp fresh basil, chopped
2 tbsp fennel seeds, ground
1 tbsp fresh thyme
salt and pepper, to taste

Instructions

Drizzle olive oil over all vegetables and grill until tender.

Place grilled vegetables in a blender and gradually add the heated chicken stock.

Combine mixture in a large pot with herbs and cream and cook, covered, over low heat, for 50 minutes.

Season with salt and pepper to taste.
