Ingredients
Serves: 4- 12 ounces tilapia fillets
- 1 red onion, sliced 1/4-inch thick
- 2 tablespoons olive oil
- 3 cups shredded cabbage
- 1 carrot, shredded
- Juice of 1 lime
- 3/4 teaspoon sugar
- Salt
- 1/4 cup salsa verde
- 4 (6-inch) tortillas, warmed
Preparation method
Prep: 20 mins | Cook: 5 mins1. Preheat grill to medium.
2. Coat fish and onion with 1 tablespoon oil and sprinkle fish with salt.
3. Cook onion on grill for about 5 minutes to soften, then chop. Combine onion, cabbage, carrot, lime juice, sugar, and 1 tablespoon oil in a bowl.
4. Brush grill with small amount of oil. Grill fish for about 5 minutes, flipping midway through cooking time, until opaque. Shred fish and add to the cabbage.
5. Stuff tortillas with salsa verde and the cabbage/fish mixture. Serve.
