Ingredients
Serves: 4- 4 fresh rosemary sprigs
- 4 large bay sprigs
- 3 swordfish steaks, cut into 1-inch pieces
- 2 tablespoons lemon juice
- 1 tablespoon finely chopped fresh oregano
- 2 bay leaves, shredded
- 1 clove garlic, minced
- 2 tablespoons olive oil
Preparation method
Prep: 10 mins | Cook: 5 mins | Extra time: 30 mins, marinating1. Pluck almost all the leaves and herbs from the rosemary and bay sprigs, leaving just the very top leaves. These will be your skewers for the grilled swordfish.
2. To make the swordfish marinade, combine the lemon juice, oregano, bay leaves, garlic, and olive oil in a bowl. Stir in the swordfish to coat. Cover and refrigerate for 30 minutes to marinate.
3. Preheat grill to Medium.
4. Skewer the swordfish on the rosemary and bay leaves. Place kebabs on the grill. Cook for 2 minutes, then flip and grill for another 2 minutes.
5. Remove grilled swordfish from skewers and serve.
