Grilled shrimp pizza recipe details
A great grilled pizza with a touch of surf to it. Shrimp is your topping, red pepper pesto your sauce–flavorful and easy.

Ingredients
Serves: 4- 2 red bell peppers, cut in half, seeds removed
- 5 tablespoons olive oil
- 1 pound medium shrimp, peeled and deveined
- Salt and pepper
- 2 cups shredded mozzarella cheese
- 3/4 cup thinly sliced basil leavs
- 1 tablespoon lemon juice
- 1 (12-inch) prebaked pizza crust
Preparation method
Prep: 15 mins | Cook: 5 mins1. Preheat grill to medium.
2. Toss red bell peppers and shrimp with 2 tablespoons olive oil. Thread shrimp on metal skewers. Place peppers and shrimp skewers on grill and cook for about 5 minutes (until shrimp turn pink); remove shrimp, but continue to cook the peppers for another 6 or 7 minutes, until soft. Flip occasionally.
3. Peel roasted bell peppers, then pulse peppers, 1/2 cup mozzarella, 1/2 cup basil, and lemon juice together in a food processor until smooth. Add olive oil, pulse again, and adjust seasonings with salt and pepper.
4. Pour pesto onto the pizza crust and spread out into an even layer. Top with shrimp, remaining mozzarella, and remaining basil.
5. Set pizza on the grill. Close lid and grill for about 5 minutes, or until the pizza is heated through and cheese is bubbling.
