Grilled salmon with cocktail sauce recipe details
Ingredients
4 | salmon steaks |
1 tsp | fennel seed |
1 tsp | coriander seed |
2 | bay leaves |
3 | cardamom pods |
3 | cloves |
240 ml | boiling water |
240 ml | cold water |
1 tbsp | salt |
1 tbsp | sugar |
1 tsp | horseradish |
6 tbsp | ketchup |
juice of half a lemon | |
tabasco and/or worcesterhsire sauce, if desired |
Instructions
Roast the spices (bay leaves, coriander, cloves, fennel, cardamom) in a heavy skillet. Do not use a non-stick skillet and do not use oil. When bay leaves are largely brown the spices should all be roasted. Transfer to a mortar and grind to a powder. Does not need to be perfect, do not worry if some of the pods do not grind up all the way.Add the sugar and salt to the hot water, stir to dissolve.
Combine hot water, cold water and spices in a container or heavy duty plastic bag, add the salmon, and marinate it in the brine for at least two hours.
Pre-heat your oven grill, set to highest heat possible.
Pat salmon dry, remove any large pieces of spices that may stick to it and lightly brush with oil. Place salmon directly under your oven grill and roast for about 3 minutes on each side.
To make the cocktail sauce combine ketchup, lemon juice and horseradish, adding tabasco and/or Worcestershire sauce if desired.
Serve salmon with cocktail sauce.
Alternatively you can make this recipe with prawns or other types of fish, but thinner fish fillets may dry out to quickly under the grill.
