Broccoli and bacon loaded cheesy baked potato recipe details
Wanted a big snack so I snagged a potato at the store and whipped this up. Could be a sweet side dish or a lunch, too.

Ingredients
Serves: 1- 2 strips bacon
- 1 large russet potato
- 2 tbls butter
- 2 tbls flour
- 1 cup chicken broth
- 1 cup cheddar cheese, grated
- 1 head broccoli, cut into florets
- salt and pepper, to taste
Preparation method
Prep: 5 mins | Cook: 25 mins1. Put a skillet over medium-high heat and cook the bacon until crispy, about 10 minutes, flipping once. Set on paper towels and reserve.
2. Put about one inch of water in a large pot and bring to a boil. Put broccoli in water (or, better, in a steamer basket) and cover to steam. Steam until a sharp knife glides through the broccoli floret stems, about five minutes. Drain water away, put broccoli in a bowl, and put in the oven on the lowest temperature possible to keep it warm.
3. Poke the potato with a fork a few times (this will help it release heat so it won’t explode) and put in the microwave. Cook on high until a sharp knife glides through the potato. Cooking time will depend on how powerful your microwave is. Takes about 8 minutes in mine.
4. While the potato is cooking, it’s time to make the cheese sauce! Yum. In a small saucepan over medium high heat, melt the butter until it foams. Add the flour slowly and whisk for about two minutes. (You want it to get a little bit brown but not too much, so pull it off the heat if it looks like it’s cooking too much.) You’ve just made a roux. Now add the salt, pepper, and chicken broth and turn the heat to high. Bring to a boil, stirring constantly, and continue stirring until the sauce thickens slightly. Take off the heat and add the cheese. Stir to combine.
5. Crumble the bacon.
6. When the potato is done, take it out of the microwave and cut it in half lengthwise. Pour the cheese sauce on the potato, drop on the broccoli, and top it with the crumbled bacon. Eat and enjoy.
