Ingredients
Serves: 4- 8 eggs
- 1/2 cup mayonnaise
- 1/3 cup golden raisins
- 1/3 cup chopped sweet gherkins
- 1/3 cup chopped red onion
- 2 tablespoons chopped fresh cilantro
- 1 1/2 teaspoons curry powder
- 1/4 teaspoons salt
- 1/8 teaspoon black pepper
Preparation method
Prep: 10 mins1. Place eggs in a saucepan, cover with cold water and bring to a boil over medium-high heat. When water boils, remove from heat and cover the saucepan. Let the eggs sit for 16 minutes, then drain and cool eggs in a bowl of ice water. Peel and chop coarsely.
2. Chop the egg whites roughly and reserve. In a mixing bowl, mash the egg yolks with remaining ingredients, then stir in the chopped whites.
3. Mix well and serve as a sandwich filling or on its own.
