An Asian-style marinade featuring sake gives grilled chicken thighs a unique flavor.

Ingredients
Serves: 4- 2 cups sake
- 3 green onions, minced
- 2 cloves garlic
- 2 teaspoons fresh ginger, minced
- 2 tablespoons rice wine vinegar
- 1 tablespoon soy sauce
- 8 chicken thighs, bone-in and skin on
- Salt
- Freshly ground black pepper
Preparation method
Prep: 10 mins | Cook: 30 mins | Extra time: 3 hours, marinating1. In a non-reactive baking dish large enough to hold all eight chicken thighs, add the sake, green onions, garlic, ginger, rice wine vinegar and soy sauce. Mix everything together.
2. Add the chicken and turn to coat it with the spice/liquid mixture. Cover and put in the refrigerator to marinate for three hours.
3. After the three hours, preheat grill to medium-high.
4. Remove the chicken from the marinade and shake off any excess liquid. Season the chicken with the salt and pepper.
5. Grill the thighs, skin-side down, for about 10 minutes. Then turn the thighs and move them to a cooler part of the grill. Close the grill.
6. Cook for another 10 to 15 minutes, or until completely cooked through.
