Grilled Salmon Filet, Smoked Bacon Wraps, and Oven Roasted Tomato Basil Compote recipe
- Ingredients
- One 7-ounce fillet of salmon
- 1 strip of Applewood Smoked Bacon (par cooked for 4 to 7 minutes at 375 degrees)
- 2 Roma tomatoes*
- 4 leaves of basil, cut into strips
- salt and pepper to taste
- 1 ounce white wine
- 1 ounce vegetable broth
- 1 teaspoon garlic chopped
- 1 teaspoon olive oil
*Remove skins, chop roughly, and toss with garlic and olive oil with salt and pepper; roast at 300 degrees for 1-1/2 to 2 hours.
Wrap salmon filet with smoked bacon, secured with toothpicks in fashion of a beef fondue. Cook on open flame broiler for 9 to 12 minutes until fish is just cooked through. While fish is cooking, saute garlic in olive oil until golden brown. Add roasted tomatoes, basil, salt and pepper. Saute 1 minute, then add white wine and vegetable broth. Cool 3 to 4 minutes over medium-high heat. Place salmon in center of plate and remove toothpicks. Smother in sauce. Serve with your favorite vegetable. Enjoy!
