Grilled prawns with chili grapefruit sauce recipe details
Ingredients
4 tbsp | garlic, chopped |
1 tbsp | prawn paste |
2 tbsp | fish sauce |
2 tsp | sugar |
5 | chilies, red, stemmed and thinly sliced |
700 g | Chinese cabbage, cut crosswise into 2.5cm pieces |
1 l | boiling salted water |
4 | grapefruit, peeled |
1 kg | prawns, large, peeled and deveined |
1 tsp | salt |
sprig(s) | coriander for garnish |
Instructions
Place 3 tbsp of the garlic, the prawn paste, fish sauce, sugar and chilies in a serving bowl (reserve the remaining garlic).Blanch the cabbage in another bowl by covering it with the boiling salted water. Let stand for 1 minute and drain well. Transfer the cabbage to the serving bowl with the garlic mixture.
Remove the membranes from the grapefruit, saving the juice. Add the grapefruit and juice to the cabbage mixture. Cut each prawn in half lengthwise, then crosswise. Place in a bowl. Sprinkle with the salt and mix will well with the reserved garlic.
Sauté the prawns quickly in hot oil until just pink, no more than 1 minute. Toss with the other ingredients and serve warm, garnished with coriander sprigs.
