Grilled pizza pitas with chicken onions and red peppers recipe details

Ingredients
Serves: 4- 1 chicken breast, boneless and skinless
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 red onions, cut into rings
- 2 red bell peppers, cut into flat panels
- 4 pita breads
- 2 ounces feta cheese, crumbled
Preparation method
Prep: 10 mins | Cook: 20 mins1. Preheat grill to Medium and lightly oil grate.
2. Season chicken with salt and pepper, then place on grill. Cook for about 5 minutes on each side, until chicken is 160 degrees F internally and no longer pink in the middle. Cool, then shred.
3. While chicken is cooling, place onions and bell pepper on grill. Cook for about 10 minutes to char the peppers. Cool, then peel peppers and slice.
4. On each pita, place a few grilled onion rings, pepper slices, pieces of chicken, and feta cheese. Place pizzas on grill and cook for about 4 minutes to heat through. Garnish with mint.
