Ingredients
Serves: 4- 4 pita breads
- 2 tablespoons olive oil
- 4 handfuls arugula
- 2 tablespoons grated Parmesan cheese
- 2 garlic cloves, minced or grated
- Salt and pepper, to taste
- 1 tablespoon water
- 1 chicken breast, skinless and boneless, grilled and sliced thinly
- 1/4 cup crumbled feta cheese
- 20 grape tomatoes, halved
- 4 artichoke hearts, quartered
- 20 kalamata olives, pitted and halved
Preparation method
Prep: 10 mins | Cook: 10 mins1. Preheat grill to High.
2. In a food processor or blender pulse together the arugula, Parmesan, garlic, and remaining oil. Adjust taste and consistency with water, salt, and pepper.
3. Coat pitas with 2 teaspoons oil. Place pitas on grill and cook for about 2 minutes, then flip and spread with pesto. Top with chicken, feta, tomatoes, artichoke, and olives. Continue to grill for about 3 minutes to toast the pita and warm toppings.
