Grilled chicken pesto sandwiches recipe details
An easy grilled sandwich with the fresh summer taste of pesto and mozzarella cheese. Get the fixins ready ahead of time and you can build this sandwich in 10 minutes flat.

Ingredients
Serves: 6- 6 (4 ounce) boneless skinless chicken breasts
- 3/4 cup pesto
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 12 (1/2-inch thick) slices Italian bread
- 1 (12 ounce) jar roasted red bell peppers, drained
- 4 ounces fresh mozzarella cheese, cut into 6 slices
Preparation method
Prep: 15 mins | Cook: 8 mins1. Preheat grill to medium and lightly oil grate.
2. Place chicken between two layers of plastic wrap and use a meat pounder (or a rubber mallet from your workshop) to flatten the chicken to about 1/4-inch. Discard plastic wrap and coat the chicken breasts with 1 tablespoon pesto each. Season with salt and pepper.
3. Place chicken on the grill and close the lid. Cook for about 4 minutes, then flip the chicken and cook for 4 more minutes, or until chicken is no longer pink in the middle. Slice thinly.
4. Spread the rest of the pesto on the toast slices. Build sandwiches with bell peppers, chicken, and mozzarella.
