Ingredients
Serves: 10- 3/4 cup orange juice
- 1/2 cup lemon juice
- 1/3 cup lime juice
- 4 cloves garlic, minced
- 1/2 cup soy sauce
- 1 teaspoon finely chopped canned chipotle pepper
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1 teaspoon dried oregano
- 1 tablespoon black pepper
- 1 bunch fresh cilantro, chopped
- 1/2 cup olive oil
- 3 pounds flank steak, pounded to 1/4-inch thickness and cross-hatched
Preparation method
Prep: 10 mins | Cook: 10 mins | Extra time: 1 day, marinating1. Combine all ingredients (except steak) in a mixing bowl, whisking to incorporate well. Measure out 1 cup of the mixture and set aside in a separate bowl. Pour the rest into a large plastic resealable bag.
2. Add steak to bag, seal, turn to coat, and refrigerate for 24 hours to marinate. Refrigerate reserved 1 cup marinade as well.
3. Preheat grill to medium-high and lightly oil grate. Drain steak from marinade, place on grill, and cook for about 10 minutes, flipping once midway through cooking time. Steak will be done medium-rare, so cook a few minutes longer if you want it to be medium doneness.
4. Slice meat thinly and place in a serving bowl or platter. Drizzle with the 1 cup reserved marinade. Serve.
