Greengage and vanilla tart recipe details
Ingredients
400 g | pastry |
450 g | greengages, halved, stoned |
3 tbsp | caster sugar |
2 medium | eggs |
1 tsp | vanilla extract |
140 ml | single cream |
icing sugar, for dusting |
Instructions
Preheat oven to 200°C.Roll out the pastry and line a shallow tin, about 24cm across. Trim the edges. Place it on a baking sheet and bake for 15 minutes. Remove the paper and cook for 5 minutes more until pale golden.
Put the greengages into a roasting tin, sprinkle with 1 tablespoon of sugar and roast until just softened. Drain off any juices. Arrange the greengages in the pastry case, cut sides up.
Reduce the oven to 160°C.
Lightly whisk the eggs, add in the vanilla, remaining sugar and cream. Pour the egg mix around the greengages, and bake for 30 minutes until the custard is set.
Cool the tart in the tin for 10 minutes, then remove from tin and dust with icing sugar.
