Ingredients
5 tbsp | bulgur |
2 bunch(es) | parsley, finely chopped |
1 bunch(es) | fresh mint, chopped |
2 | onions, diced |
1 tsp | ground allspice |
2 | ripe tomatoes |
1 | lemon, grated peel and juice |
2 tbsp | extra virgin olive oil |
3 tbsp | white wine vinegar |
6 | eggs |
sea salt | |
pepper | |
1 pinch(es) | saffron |
3 tbsp | milk |
4 tbsp | crème fraîche |
1 pinch(es) | ground cumin |
Instructions
Prepare the Bulgur as advised at the package. Transfer into a bowl.Seed and finely dice the tomatoes. Add into the bowl, together with 3 tablespoons of the lemon juice, the lemon rind, olive oil, onions, herbs and allspice. Add the saffron, milk, Crème fraîche and cumin. Mix well and season to taste with sea salt and pepper. Divide the Bulgur mixture onto 6 plates.
For the poached eggs bring 1 l of water with the vinegar to the boil. Crack an egg into a little bowl, a cup or a large ladle, then slip the egg into the simmering water. Repeat the procedure with the other eggs. Cook for 3 minutes, then, with a slotted spoon, take the eggs out of the water, place one of them on each plate with Bulgur and serve immediately.
