Ingredients
500 g | peas |
1 tsp | olive oil |
1 tbsp | ginger, finely chopped |
1 | leek, thinly sliced |
700 ml | vegetable stock |
20 g | fresh dill |
2 tbsp | cornstarch |
4 tbsp | water |
salt and pepper, to taste |
Instructions
Pour the oil into a medium saucepan and cook ginger over medium heat for 2 minutes. Add the leeks and cook for further 3 minutes. Stir in the peas, stock and dill and bring to a boil.
Remove from the heat. Pour into a blender and puree until smooth.
Dissolve cornstarch in water and add to the pureed mixture. Return to the heat, and stir until thickened, 1 minute.
To serve, toss sauce with pasta.
