Green Pea Sauce for Pasta recipe

|1 tsp||olive oil|
|1 tbsp||ginger, finely chopped|
|1||leek, thinly sliced|
|700 ml||vegetable stock|
|20 g||fresh dill|
|salt and pepper, to taste|
Pour the oil into a medium saucepan and cook ginger over medium heat for 2 minutes. Add the leeks and cook for further 3 minutes. Stir in the peas, stock and dill and bring to a boil.
Remove from the heat. Pour into a blender and puree until smooth.
Dissolve cornstarch in water and add to the pureed mixture. Return to the heat, and stir until thickened, 1 minute.
To serve, toss sauce with pasta.
