Pea and mint soup recipe details
Ingredients
750 g | peas |
80 g | mint leaves, chopped |
30 g | butter |
1 medium | red onion, chopped |
1 clove(s) | garlic, minced |
1 l | vegetable broth |
80 g | Parmesan cheese, grated |
salt and pepper, to taste |
Instructions
Heat oil and butter in a large saucepan, and sauté the onion until soft, but not browned. Add the garlic and cook for a further 32 minutes.Add 3/4 of the peas, the chopped mint leaves, and 3/4 of the broth. Cover with a fitting lid and coo for 10 minutes.
Process soup in a blender until nicely puréed. Return puréed soup to the pan, season with salt and pepper and add the remaining peas and stock. Cook for a further 5-10 minutes.
