Green pea layered salad recipe details
This recipe was developed by my Aunt Myra from Georgia and has been a mainstay throughout our large family for decades. It is a perfect side dish for potlucks, barbecues and gatherings. It can also be enjoyed as a light main course, especially in the summer when it is so refreshing. It is simultaneously crunchy and creamy and the layering makes it look nice, particularly when made in a glass bowl.

Ingredients
Serves: 6- 1 (16 ounce) package frozen green peas
- 1 head of lettuce, chopped
- 1 red onion, thinly sliced
- 1 cup grated carrots
- 1 cup sour cream
- 1 tablespoon vinegar
- 2 cups mayonnaise
Preparation method
Prep: 20 mins | Cook: 3 mins | Extra time: 8 hours, chilling1. Drop the green peas into a pot of salted, boiling water. Cook for 3 minutes; drain and rinse with cold water.
2. Layer in a glass bowl the lettuce, onion, carrots and green peas. In a separate bowl, thin the sour cream with the vinegar, then stir in the mayonnaise. Pour over the salad. Cover with plastic wrap and chill over night.
