Quick and easy egg salad with flavor from olives and mayonnaise. You won’t get egg salad done any faster.

Ingredients
Serves: 4- 4 eggs
- 1/4 cup chopped green olives
- 1/4 cup mayonnaise
Preparation method
Prep: 10 mins1. Place eggs in a saucepan, cover with cold water and bring to a boil over medium-high heat. When water boils, remove from heat and cover the saucepan. Let the eggs sit for 16 minutes, then drain and cool eggs in a bowl of ice water. Peel and chop coarsely.
2. Combine all ingredients in a mixing bowl and stir well to incorporate.
3. Serve on toasted pumpernickel bread for classic egg salad sandwiches.
