Green gutab recipe details
Ingredients
150 g | spinach, chopped |
150 g | sorrel, chopped |
50 g | spring onions, thinly sliced |
1 tbsp | cilantro or dill, chopped |
1 tbsp | parsley, chopped |
20 g | butter |
2 | eggs, beaten |
140 g | wheat flour |
50 g | yoghurt |
salt and pepper |
Instructions
In a pan melt the butter. Add the spinach, sorrel and the onions and cook stirring for 5 minutes over low heat. Add a dash of water, cover and steam until the greens are mushy and rather dry.In a bowl combine the flour with dill or cilantro, parsley and the egg. Knead to a firm and pliable dough, adding some drops of water if necessary. Roll out the dough. Cut out rounds with a glass. Spoon a small heap of the greens onto each round and fold the dough over to crescents. Press together the edges firmly to seal the gutab. Toast in a dry pan over low heat until browned on both sides.
Spread the gutab with butter and serve together with the yoghurt.
