Ingredients

150 g spinach, chopped
150 g sorrel, chopped
50 g spring onions, thinly sliced
1 tbsp cilantro or dill, chopped
1 tbsp parsley, chopped
20 g butter
2  eggs, beaten
140 g wheat flour
50 g yoghurt
salt and pepper

Instructions

In a pan melt the butter. Add the spinach, sorrel and the onions and cook stirring for 5 minutes over low heat. Add a dash of water, cover and steam until the greens are mushy and rather dry.

In a bowl combine the flour with dill or cilantro, parsley and the egg. Knead to a firm and pliable dough, adding some drops of water if necessary. Roll out the dough. Cut out rounds with a glass. Spoon a small heap of the greens onto each round and fold the dough over to crescents. Press together the edges firmly to seal the gutab. Toast in a dry pan over low heat until browned on both sides.

Spread the gutab with butter and serve together with the yoghurt.
