Ingredients

3  bell peppers, yellow, red and green, diced, diced
600 g potatoes, peeled and quartered
100 g cucumber, grated
2 tbsp lemon juice
salt and freshly ground black pepper
200 g Greek yoghurt (10% fat)
1  pickled roasted bell pepper, diced
50 g Feta cheese, crumbled
1  onion, chopped
600 g beef mince
3 tbsp breadcrumbs
1  egg
5 tbsp oil
1 clove(s) garlic, minced
1 tsp paprika powder
1 tsp tomato puree
1 tsp mixed dried herbs, e.g. oregano, basil…

Instructions

In a bowl mix together the bell peppers, potatoes and 3 tablespoons of oil. Season with salt and pepper. Preheat the oven to 150°C. Divide the vegetables on a lined baking tray and bake for 35-40 minutes.

Mix the yoghurt with cucumber and garlic. Season to taste with salt, pepper and lemon juice.

In a bowl combine the Feta cheese and the pickled bell pepper.

Mix together the beef mince, onion, breadcrumbs, 1 teaspoon of salt, the paprika powder, herbs, tomato purée and ½ teaspoon of pepper. Mix in the egg and knead until well combined. Form 8 meatballs. Fill each meatball with ½ teaspoon of the Feta mixture.

In a pan, heat the remaining oil. Fry the meatballs until brown and crispy all around. Serve the meatballs together with the vegetables and the yoghurt dip.
