Grandma burgtorf's glorified rice recipe details
My Grandparents always made this for family get-togethers and potlucks.

Ingredients
Serves: 8- 1 cup long grain rice
- 1 cup sugar
- 3 tablespoons corn starch
- 1 (8 ounce) can crushed pineapple in juice
- 1 (8 ounce) can pineapple tidbites in juice
- 1/4 cup lemon juice
- 3 eggs
- 1 8 ounce container whipped topping
- maraschino cherries for garnishing
Preparation method
Prep: 3 mins | Cook: 15 mins | Extra time: 3 hours 17 mins1. Cook rice per directions on package until tender. Rinse rice off with cold water to remove starch. Set aside until ready to assemble.
2. In a medium sauce pan combine sugar, cornstarch than add both can’s of pineapple juice in all and lemon juice. Cook over medium heat until thick. (The pudding mixture will be very thick.) Remove from heat beat in eggs one at a time very quickly. Return to heat and thicken once again. Cool pudding.
3. In a large bowl fold rice, pudding and whipped topping. Place mixture in a bowl of your choice and garnish with maraschino cherry’s. Chill several hours or overnight.
