Gooseberry sauce recipe details
Ingredients
250 g | gooseberries |
250 ml | dry white wine |
125 ml | water |
50 g | butter |
1 tbsp | flour |
250 ml | chicken stock |
salt and pepper | |
1 | egg yolk |
2 tbsp | cream |
Instructions
Blanch the gooseberries for 3 minutes in boiling water, then drain. Bring white wine and sugar to a boil and cook the gooseberries until very soft. Pass through a sieve into a bowl and set aside.In a saucepan, heat half of the butter. Add the flour and cook stirring for 30 seconds. Add the water, stirring constantly with a wire whisk. Season with salt and pepper and cook for approximately 10 minutes, stirring frequently.
In a small bowl mix the egg yolks and the cream with a little of the sauce. Whisk the mixture into the sauce, together with the remaining butter. Add the gooseberry puree and stir until well combined. Season to taste with salt and pepper.
