Ingredients
250 g | apples, peeled, cored and finely diced |
250 g | gooseberries |
250 ml | water |
125 g | sugar |
butter | |
For the cream: | |
2 | eggs |
2 | egg yolks |
1 tbsp | sugar |
1 tsp | vanilla sugar |
250 g | whipping cream |
For the meringue: | |
2 | egg white |
100 g | sugar |
Instructions
In a saucepan, bring the water with the sugar to a boil. Add the apples and the gooseberries and cook until soft. Drain. Whip the cream until stiff.
Preheat the oven to 170°C. Divide the compote in a buttered casserole dish. Cream together the eggs, egg yolks, sugar and the vanilla sugar. Fold in the whipped cream. Spread the mixture onto the compote and bake for 15 minutes.
Whisk the egg whites with the sugar until stiff. Spread the dessert with the meringue mixture. Reduce the oven heat to 120°C and bake for 15 minutes until golden.
Serve warm with a glass of sparkling wine.
